The Yarra Valley is renowned for producing red wines of restraint and finesse. The temperate climate allows full flavour and colour development without excessive ripeness, resulting in wines that are balanced and subtle.

Composition: Cabernet Sauvignon 45%, Cabernet Franc 33 %, Merlot 22%
Harvest date: Merlot 25th March, Cabernet Sauvignon 8th April, Cabernet Franc 8th April.
Vintage conditions: Excellent late-season ripening conditions allowed us to harvest the Bordeaux varieties in great condition after a nervous start to the season.
Winemaking: Hand-picked, destemmed and crushed to small open fermenters. Fermentation was completed in 7-10 days and the individual parcels were pressed and matured in barrels for 18 months prior to blending
Analysis: Alcohol: 13% pH: 3.55 T/A: 6.2g/l
Tasting comments: Medium ruby with an appealing vibrancy .
Spicy, red fruits and a waft of mint on the nose.
The palate is supple and generously fruity with the medium body that typifies Yarra Valley Cabernet styles.
Great cellaring potential. We suggest five to ten years.
Grilled meat dishes are of course an excellent match but also try terrines and lentil-based vegetarian options.
